It is a short-course organized by the American Dairy Products Institute which provides an in-depth introduction to dairy ingredients: what they are, how they are manufactured, utilized and marketed.
The course covers the fundamentals of production, composition, nutrition, chemistry, functionality, microbiology as well as key principles of marketing, sourcing, risk management and an overview of regulations.
In addition to presentations, the course offers ample opportunities for Q&A with instructors, networking with participants, as well sampling of dairy ingredients.
The program is taught by ADPI Center of Excellence professionals and industry experts.
